Risotto with Birra Antoniana Vienna and red chicory from Chioggia

With its soft body, our beer Vienna-style contrasts the bitterness of the chicory, making this risotto very balanced. Enjoy!

 

Ingredients for 4 people: 

320 gr carnaroli rice

1 glass of Birra Antoniana Vienna style

Vegetable broth, q.b.

1 shallot

400 gr red chicory from Chioggia

Olive oil, q.b.

Butter, q.b.

Grana Cheese

 

Preparation

Chop the shallot, brown it in a pan with a little olive oil. Add the chicory previously cut and let it wilt on low heat, mixing with a spoon from time to time. Add the rice and toast it for 2 minutes. Blend with Birra Antoniana Stile Vienna. Once the beer has vanished, continue to cook the risotto, gradually adding the warm vegetable broth. At last, cream the risotto with some butter and finish with a sprinkle of grated Grana cheese. Put out the fire and serve after one minute.
