Mussels and cherry tomatoes with Birra Antoniana ai Tadi

Mussels are an always-available seafood, rich in iron. They contain 58 calories for 100 g. If they are previously cleaned by the fisherman, they can then be prepared at home in a simple and quick way.

Ingredients for 4 people: 

1 kg mussels

500 g cherry tomatoes

1 spoon of chopped fresh parsley

1 shallot

1 clove of garlic

200 ml Birra Antoniana Ai Tadi

olive oil

black pepper

brown sugar and a bouquet garni for the cherry tomatoes

 

Preparation:

Wash the cherry tomatoes and put them on a baking tin covered by silpat or baking paper. Season with salt, pepper, oil, brown sugar and the bouquet garni. Bake in a conventional oven for 1h30' at 150°. 

In a saucepan, pour a spoon of olive oil, add the shallot and the garlic clove and let them brown for some minutes. Add then the beer and make it boil and evaporate till it decreases by half. Add the mussels and, after 5', the cherry tomatoes. Cover, cook for other 5' and serve immediately in small cups with slices of toasted bread, some parsley and black pepper.

Match the dish with a glass of Birra Antoniana ai Tadi.

Note: mussels are naturally salty, so they don't need more salt.
