Lupine hummus and Birra Antoniana with Biancoperla Corn


Have you ever heard of the lupine? It is a legume coming from the Peruvian Andes and it is protected by Slow Food. In addition to the richness of nutritional properties, it is a perfect ingredient for tasty dishes, especially if matched with a good and fresh beer. So here it is the wedding of the month: Lupine hummus by the Peruvian Andes and Birra Antoniana with Biancoperla Corn.



Lupins 300 g in brine or vacuum-sealed

Half-lemon juice

Oil q.s.

Shallot 1

Half teaspoon of sweet pepper

salt q.s.

pepper q.s.


Soak the lupins in warm water for an hour to remove the excess salt. Then wash and peel them. Make them boil for 5 minutes, drain and blend with the shallot, the half-lemon juice, some pepper and oil. When it becomes a soft and creamy compound, serve it with a sprinkling of sweet paprika on top.
